Caponata Recipe
Ingredients

6 tablespoons olive
oil

2 aubergines, cubed
-
1 red onion,
chopped
-
3 celery sticks,
chopped

5 tomatoes, skinned
and roughly chopped

3 tablespoons red wine vinegar
-
1 tablespoon sugar
-
1 tablespoon capers
-
50 g/2 oz black olives,
pined

handful of flat
leaf parsley, chopped

salt and pepper
Method:

Heat the oil in a saucepan, add the aubergines
and fry until golden and soft. Remove from the
pan and drain on kitchen paper.

Add the onion
and celery to the pan and sauté for 6 minutes
until soft but not brown.

Add the tomatoes and
cook for 3 minutes, then add the vinegar, sugar,
capers, olives and parsley, and season to taste
with salt and pepper.

Simmer for 5 minutes.
Remove the pan from the heat, add the aubergines
and mix well. Allow to cool, then serve.
