Salads Recipes - Caponata Recipe

Ingredients

Serve 4

  • 6 tablespoons olive oil

  • 2 aubergines, cubed

  • 1 red onion, chopped

  • 3 celery sticks, chopped

  • 5 tomatoes, skinned and roughly chopped

  • 3 tablespoons red wine vinegar

  • 1 tablespoon sugar

  • 1 tablespoon capers

  • 50 g/2 oz black olives, pined

  • handful of flat leaf parsley, chopped

  • salt and pepper


Method:

  1. Heat the oil in a saucepan, add the aubergines and fry until golden and soft. Remove from the pan and drain on kitchen paper.

  2. Add the onion and celery to the pan and sauté for 6 minutes until soft but not brown.

  3. Add the tomatoes and cook for 3 minutes, then add the vinegar, sugar, capers, olives and parsley, and season to taste with salt and pepper.

  4. Simmer for 5 minutes. Remove the pan from the heat, add the aubergines and mix well. Allow to cool, then serve.
