1 large celeriac,
cut into matchstick lengths

2-3 tablespoons thick
Mayonnaise

1/2 teaspoon Dijon
mustard

To garnish:
Method:

Blanch the celeriac in
a saucepan of salted boiling water for 2-3 minutes,
or until just tender. Drain thoroughly and allow to
cool.

Blend the mayonnaise with the mustard in a salad
bowl. Add the celeriac and toss well.
-
Sprinkle with
the parsley and a little paprika and serve
immediately.
