Salads Recipes - Chicken and Mushroom Penne Salad Recipe

Ingredients

Serve 4

  • 300 g/10 oz penne or other pasta shapes

  • 250 g/8 oz cold cooked chicken, cut into strips

  • 125 g/4 oz button mushrooms, sliced

  • 1 red pepper, cored, deseeded and finely sliced

  • 2 tablespoons sesame oil

  • 1 teaspoon sesame seeds

  • 1 tablespoon lemon juice

  • 4 spring onions, diagonally sliced

  • salt and pepper

  • 2 tablespoons chopped parsley, to garnish


Method:

  1. Cook the pasta until al dente, drain in a colander under cold running water and drain again. Put the drained pasta in a large salad bowl.

  2. Add the chicken, sliced mushrooms and red pepper strips. Pour in the oil, sesame seeds, lemon juice and spring onions.

  3. Add salt and pepper to taste and toss well to combine all the ingredients. Garnish with the chopped parsley and serve at room temperature.
