Salads Recipes - Chicory, Orange and Pasta Salad Recipe

Ingredients

Serve 4-6

  • 500 g/1 lb tagliatelle, cut into shorter lengths

  • 4 chicory heads, sliced

  • 6 large oranges, divided into segments

  • 2 tablespoons chopped tarragon

  • 4 tablespoons snipped chives

  • salt

Orange dressing:

  • 6 tablespoons olive oil

  • 2 tablespoons orange juice

  • 2 tablespoons lemon juice

  • 1/2 teaspoon coarse grain mustard

  • 1 teaspoon clear honey

  • 1 teaspoon chopped mixed herbs

  • 1 teaspoon finely grated orange rind


Method:

  1. Cook the pasta until al dente. Drain the pasta in a colander, rinse under cold running water and drain again.

  2. To make the dressing, whisk together all the ingredients. Pour the dressing over the pasta. Stir in the chicory, orange segments and herbs.

  3. Transfer to a serving dish and serve immediately.
