Salads Recipes - Chicory and Pear Salad with Roquefort Recipe

Ingredients

Serve 4-6

  • 2 large ripe pears

  • 1 tablespoon lemon juice

  • 1 orange, peeled and segmented

  • 2 chicory heads, trimmed and separated into leaves

  • 175 g/6 oz Roquefort cheese

  • 2 tablespoons snipped chives 

Dressing:

  • 3 tablespoons walnut oil

  • 2 tablespoons white wine vinegar

  • 1/2 teaspoon finely grated orange rind

  • pinch of sugar

  • salt and pepper


Method:

  1. First make the dressing. Whisk all the ingredients together in a small bowl or place them in a screw-top jar and shake well to combine.

  2. Peel, core and thinly slice the pears and place in a small bowl with the lemon juice. Toss well to prevent them from discoloring.

  3. Arrange the pear slices, orange segments and chicory leaves on individual plates or in a large shallow bowl. Pour the dressing over.

  4. Crumble the Roquefort over the salad, sprinkle with the chives, and serve immediately.
