Salad with Roquefort Recipe

2 large ripe pears

1 tablespoon lemon juice

1 orange, peeled and segmented

2 chicory heads, trimmed and separated into leaves

175 g/6 oz Roquefort cheese

2 tablespoons snipped
chives
Dressing:
Method:

First make
the dressing. Whisk all the ingredients together in a small bowl or
place them in a screw-top jar and shake well to combine.

Peel, core
and thinly slice the pears and place in a small bowl with the lemon
juice. Toss well to prevent them from discoloring.

Arrange the pear
slices, orange segments and chicory leaves on individual plates or
in a large shallow bowl. Pour the dressing over.

Crumble the
Roquefort over the salad, sprinkle with the chives, and serve
immediately.
