Coronation Prawn
and Pasta Salad Recipe

300 g/10 oz fusilli or other
pasta shapes
1 tablespoon olive
oil
15 g/1/2 oz butter
500 g/1 lb large
raw prawns, peeled, de veined and
halved lengthways
2 celery sticks,
finely chopped
3 tablespoons crème
fraiche
125 ml/4 fl oz
Mayonnaise
1 teaspoon lemon
juice
2 teaspoons
medium-hot curry paste
salt and pepper
To serve:
salad leaves
lemon wedges
Method:
Cook the pasta until al dente.
Meanwhile, heat the oil and butter in a frying pan, add the prawns
and cook over a medium-high heat for about 2 minutes, until they
turn pink and start to brown in places. Remove the prawns and drain on kitchen paper.
Drain
the pasta, rinse under cold running water, drain again
and set aside.
Place the pasta in a large bowl with the prawns, celery,
crème fraiche, mayonnaise, lemon
juice, curry paste and pepper, and mix thoroughly. Adjust the
seasoning to taste.
Cover and chill for 20 minutes.
Arrange the lettuce leaves on
individual plates, divide the salad among them and serve with the
lemon wedges.
