Salads Recipes - Couscous, Chickpea and Prawn Salad Recipe

Ingredients

Serve 4

  • 175 g/6 oz cooked couscous

  • 400 g/13 oz can chickpeas, drained and rinsed

  • 500 g/1 lb cooked peeled prawns

  • 2 spring onions, thinly sliced

  • 3 tomatoes, deseeded and chopped

  • 1 bunch of mint, chopped

  • lemon wedges, to garnish

Dressing:

  • 6 tablespoons olive oil

  • 3 tablespoons lemon juice

  • pinch of caster sugar paprika, to taste

  • salt and pepper


Method:

  1. To make the dressing, whisk all the ingredients together in a small bowl or place them in a screw-top jar and shake well to combine. Add salt and pepper to taste.

  2. Mix the couscous with the chickpeas, prawns, spring onions, tomatoes and mint.

  3. Pour over the dressing and toss to coat all the ingredients. Garnish with lemon wedges and serve.
