Cucumber and
Pineapple Salad with Guacamole Recipe
Ingredients

1/2
cucumber, peeled and very thinly sliced

1 teaspoon salt

1/2 ripe pineapple, peeled, cored and cut into
bite-sized
pieces

1 bunch of coriander, to garnish

salt and pepper
Guacamole:
-
2 ripe avocados, roughly chopped
-
1 garlic clove, crushed
-
2 tablespoons lime juice
-
1 red chili, finely
chopped

1 tomato, skinned and finely chopped

spring onions, finely
chopped
Method:

Put
the cucumber slices in a colander and sprinkle with
the salt. Leave to drain over a large plate or in
the sink for 20-30 minutes.

Place the pineapple in a bowl. Roughly tear about
half of the coriander leaves into the bowl. Rinse
the cucumber slices under cold running water.

Drain
thoroughly, tip on to kitchen paper to dry slightly,
then add to the pineapple mixture, with salt and
pepper to taste. Toss lightly to mix.

To make the
guacamole, place all the ingredients in a bowl.
Using a fork, mash together thoroughly. Season to
taste with salt and pepper.

Garnish with coriander,
and serve at once with the salad.
Note:
Make the
guacamole just before serving, as it tends to
discolor if left to stand. If you have to make the
guacamole in advance, put the avocado stones back
into the middle of the guacamole to lessen the
discoloration, and cover with Clingfilm.
