Salads Recipes - Curried Chicken Mayonnaise Recipe

Ingredients

Serve 4-6

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 2 teaspoons ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon grated fresh root ginger

  • 2 teaspoons lemon juice

  • 1 teaspoon apricot jam

  • 2 tablespoons red wine

  • 300 ml/1/2 pint thick Mayonnaise

  • 750 g/1 1/2 lb cold cooked chicken, cut into pieces

  • salt and pepper

To garnish:

  • coriander leaves, finely chopped

  • 1/2 avocado, peeled, sliced and dipped in lemon juice


Method:

  1. Heat the oil in a frying pan, add the onion and fry gently for 5 minutes, until soft and lightly colored.

  2. Stir in the coriander, cumin and ginger. Cook for 2 minutes more. Add the lemon juice, jam and wine, and simmer for 2 minutes.

  3. Remove from the heat and leave to cool for 5 minutes. Put the mayonnaise in a large bowl and add the curry mixture, stirring very thoroughly.

  4. Add the chicken and turn in the curried mayonnaise until thoroughly coated. Garnish with chopped coriander and avocado slices, and serve.
