Salads Recipes - Goats' Cheese and Watercress Conchiglie Recipe

Ingredients

Serve 4

  • 300 g/10 oz conchiglie or other pasta shapes

  • 3 spring onions, diagonally sliced

  • 3 tablespoons raspberry vinegar

  • 6 tablespoons olive oil

  • 125 g/4 oz soft goats' cheese, diced

  • 1 orange or grapefruit, peeled and sliced into rings

  • 1 bunch of watercress, trimmed

  • salt and pepper


Method:

  1. Cook the pasta until al dente, drain in a colander under cold running water and drain again. Put the drained pasta in a large salad bowl.

  2. Mix the spring onions, raspberry vinegar and oil in a small bowl. Add salt and pepper to taste, whisk well to combine, then pour over the pasta.

  3. Fold in the goats' cheese, the orange or grapefruit slices and the watercress. Toss the salad and chill until required.

  4. Do not make this salad too far in advance as the dressing will cause the watercress to wilt.
