Salads Recipes - Greek Country Salad Recipe

Ingredients

Serve 4

  • 4 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 garlic clove, crushed

  • 1/2 cucumber, halved lengthways, deseeded

  • and thinly sliced

  • 1 small round lettuce, torn

  • 1 small cos lettuce, shredded

  • 3 firm but ripe tomatoes, cut into wedges

  • 1 Spanish onion, thinly sliced into rings

  • 1 green pepper, cored, deseeded and thinly sliced into rings

  • 125 g/4 oz feta cheese, crumbled

  • 12 or more black olives (Kalamata if possible)

  • salt and pepper 

To garnish:

  • 1-2 tablespoons roughly chopped parsley

  • 2 teaspoons chopped oregano


Method:

  1. Whisk together the oil, vinegar, garlic and salt and pepper to taste. Cover and set aside for 1 hour.

  2. Sprinkle the cucumber slices with salt and leave to drain. Rinse the cucumber and dry with kitchen paper.

  3. Place the lettuce in a bowl. Whisk the oil and vinegar again, then toss a little of it with the lettuce.

  4. Layer the tomatoes, cucumber, onion, green pepper, cheese and olives on the lettuce.

  5. Pour over the remaining dressing, then scatter over the chopped parsley and the oregano, and serve.
