Salads Recipes - Green Salad with a Mixed Herb Sauce Recipe

Ingredients

Serve 4

  • 1 round lettuce

  • 1 batavia lettuce

  • 125 g/4 oz lamb's lettuce

Herb sauce:

  • 2 hard-boiled eggs, peeled

  • 2 tablespoons double cream

  • 2 tablespoons olive oil

  • 2 teaspoons white wine vinegar

  • 1 tablespoon chopped chives

  • 1 tablespoon chopped dill

  • 1 tablespoon chopped tarragon

  • salt and pepper


Method:

  1. Break the round lettuce leaves in pieces and pile in a salad bowl. Using only the pale green inner leaves of the batavia lettuce, scatter them over the lettuce and put the lamb's lettuce on top.

  2. To make the herb sauce, separate the whites and yolks of the hard-boiled eggs. Chop the egg whites and scatter over the green salad.

  3. Mash the egg yolks to a paste with the cream, and stir in the oil very gradually.

  4. Add the vinegar slowly and stir until blended. Add salt and pepper to taste, and stir in the herbs. Pour the herb sauce over the salad, mix well and  serve.
