Herb Salad with
Grilled Haloumi Recipe
Ingredients

1 cos lettuce, torn
into bite-sized pieces

about 50 g/2 oz rocket or
young leaf spinach
-
handful of mixed herbs (dill,
chervil, coriander, basil, parsley),
roughly torn

250 g/8 oz haloumi
cheese, cut into cubes less than 2.5 cm/1 inch 1-2
tablespoons olive oil
-
1/2 quantity French
Dressing
-
pepper
Method:

Place the lettuce in a large, shallow salad bowl
with the rocket or leaf spinach and mixed herbs.

Place the cubes of haloumi in a baking tin large
enough to hold them in one layer.

Add the olive oil,
season with pepper and toss gently to coat the
cheese.

Cook under a preheated hot grill for about 8
minutes, stirring occasionally, until golden brown
on all sides. Scatter the haloumi over the salad
leaves.

Pour the dressing over the salad and toss
well. Serve immediately.
Note: Haloumi is a
traditional Cypriot cheese with a firm texture and a
deliciously salty flavor. It is superb for grilling
or frying as it develops a golden crust and does not
melt. It is available in large supermarkets or Greek
or Cypriot stores.
