Salads Recipes - Herbed Pasta Salad with Courgettes and Tomatoes Recipe

Ingredients

Serve 4

  • 250 g/8 oz dried pasta shapes

  • 250 g/8 oz baby courgettes, sliced very thinly

  • 175 g/6 oz cherry tomatoes, halved

  • 2 tablespoons pine nuts, toasted

Dressing:

  • 4 tablespoons olive oil

  • 1 tablespoon capers

  • 1 tablespoon chopped parsley

  • 1 tablespoon chopped basil

  • 1 teaspoon grated lime rind

  • 1 tablespoon white wine vinegar

  • salt and pepper

To garnish:

  • coriander sprigs

  • basil sprigs


Method:

  1. Cook the pasta until al dente.

  2. Meanwhile, prepare the dressing. Place the ingredients in a liquidizer and process until fairly smooth. Season to taste with salt and pepper.

  3. Drain the pasta and immediately toss with the dressing. Stir in the courgettes and tomatoes and leave to cool to room temperature.

  4. Scatter over the pine nuts, garnish with coriander and basil sprigs, and serve.
