Mozzarella Salad
with Pesto Dressing Recipe

cos or other crisp green lettuce, separated into
leaves

1 small head of frise

250 g/8 oz bocconcini or diced mozzarella cheese

1
red onion, chopped

salt and pepper
-
1 quantity
Pesto, to serve
To garnish:
Method:

Tear the salad leaves into bite-sized pieces and
arrange on a platter or shallow serving dish.

Scatter the bocconcini or diced mozzarella over the
leaves and sprinkle with the red onion. Add salt and
pepper to taste.

Spoon the pesto over the
mozzarella, sprinkle the salad with the basil leaves
and sprigs of oregano, to garnish, and serve.
Note:
Bocconcini are miniature balls of mozzarella cheese.
They are available from some supermarkets and
Italian delicatessens, but if you cannot obtain them
you can use regular mozzarella cut into cubes.
