Salads Recipes - Pasta and Broad Bean Salad Recipe

Ingredients

Serve 4-6

  • 500 g/1 lb shelled fresh broad beans

  • 500 g/1 lb dried pasta shells or twists

  • 175 g/6 oz salami, diced

  • salt

  • lemon thyme sprigs, to garnish 

Lime and thyme dressing:

  • 6 tablespoons Mayonnaise

  • 2 hard-boiled eggs, peeled and diced

  • 2 tablespoons lime juice

  • 2 teaspoons finely grated lime rind

  • 4 tablespoons snipped chives

  • 2 tablespoons chopped lemon thyme


Method:

  1. Cook the broad beans in a pan of salted boiling water for 5 minutes. Drain and set aside.

  2. Cook the pasta until al dente. Drain the pasta in a colander, rinse under cold running water and drain again.

  3. Transfer the pasta to a large bowl, and stir in the beans and salami.

  4. To make the dressing, mix together all the ingredients in a small bowl. Fold into the pasta and bean mixture.

  5. Spoon the salad into a serving bowl, garnish with a sprig of lemon thyme and serve.
