Bean Salad Recipe
Ingredients
Serve

500 g/1 lb shelled
fresh broad beans
-
500 g/1 lb dried pasta shells or
twists
-
175 g/6 oz salami,
diced
-
salt
-
lemon thyme sprigs,
to garnish
Lime and thyme
dressing:
-
6 tablespoons
Mayonnaise
-
2 hard-boiled eggs, peeled
and diced
-
2 tablespoons lime
juice
-
2 teaspoons finely
grated lime rind
-
4 tablespoons
snipped chives
-
2 tablespoons
chopped lemon thyme
Method:
-
Cook
the broad
beans in a pan of salted boiling water for 5 minutes. Drain
and set aside.

Cook the pasta until
al dente. Drain the pasta in a colander,
rinse under cold running water and drain again.
-
Transfer the pasta to a large bowl, and stir in the
beans and salami.
-
To make the dressing, mix together
all the ingredients in a small bowl. Fold into the
pasta and bean mixture.

Spoon the salad into a
serving bowl, garnish with a sprig of lemon thyme
and serve.
