4 pears, cut into eighths and cored

4 tablespoons lemon juice

250 g/8 oz baby spinach or lettuce

4 walnuts, chopped
-
250 g/8 oz blue Stilton cheese, crumbled

4
tablespoons walnut oil
Method:

Heat a griddle
pan or nonstick frying pan and cook the slices of pear on each side
for 1 minute. Remove and sprinkle them with the lemon juice.

Pile the spinach
on a large platter and arrange the pears on top.

Sprinkle with
walnuts and crumbled Stilton and spoon over the walnut oil. Serve
immediately.
