Salads Recipes - Rocket, Tuna and Haricot Bean Salad Recipe

Ingredients

Serve 4

  • 4 tomatoes, skinned, cored and roughly chopped

  • 125 g/4 oz rocket

  • 425 g/14 oz can haricot beans, drained

  • 200 g/7 oz can tuna in olive oil

  • 1 red onion, chopped

  • 125 g/4 oz artichoke hearts in olive oil

  • 2 young celery sticks with leaves, chopped

  • 1 tablespoon black olives, pitted

  • 4 tablespoons lemon juice

  • 1 tablespoon red wine vinegar

  • 1/2 teaspoon crushed dried chili

  • handful of flat leaf parsley, roughly chopped

  • salt and pepper


Method:

  1. Put the tomatoes into a large salad bowl with the rocket and stir in the haricot beans and the tuna with its oil, roughly breaking the tuna into large flakes.

  2. Stir in the chopped red onion. Add the artichoke hearts and their oil, celery, olives, lemon juice, vinegar, chili and parsley, and season to taste with salt and pepper.

  3. Mix all the ingredients together well and allow to stand for 30 minutes for the flavors to mingle. Serve at room temperature.
