Spiced Coleslaw

1 dessert
apple, unpeeled, cored and diced

2 carrots, grated

2 tablespoons diced gherkins

2 teaspoons capers
-
2 tablespoons chopped parsley

1/4-1/2 white cabbage or cabbage heart, shredded
Spiced
dressing:
-
3 tablespoons
Mayonnaise
-
1/2 teaspoon curry powder
-
1/2 teaspoon ground nutmeg
-
1/2 teaspoon paprika
-
1 teaspoon prepared English mustard
-
1 tablespoon olive oil
-
1 tablespoon lemon juice
-
salt and pepper
Method:

To make the dressing, whisk all the ingredients
together until blended.

Add the apple and
carrots to the dressing with the gherkins, capers
and parsley. Mix together thoroughly.

Pour the
dressing over the cabbage, toss to mix, and serve.
Note: Make the dressing
before shredding the cabbage, so that the cabbage
does not become dry. Similarly, avoid making the
coleslaw too far ahead, as the ingredients should
remain as crisp as possible.
