Salads Recipes - Spinach and Goats' Cheese Salad Recipe

Ingredients

Serve 4

  • 175 g/6 oz young spinach leaves

  • 2 oranges, peeled and segmented

  • 175 g/6 oz goats' cheese, diced

  • 5 tablespoons olive oil

  • 50 g/2 oz hazelnuts, roughly chopped

  • 1 garlic clove, crushed

  • 6 tablespoons orange juice

  • 1 bunch of watercress, leaves stripped from the stalks, very finely chopped

  • 2 tablespoons chopped mixed herbs (parsley, tarragon, mint, dill, basil)

  • salt and pepper


Method:

  1. Combine the spinach leaves, orange segments and goats' cheese in a large salad bowl.

  2. Heat the olive oil in a small frying pan, add the hazelnuts and garlic, and cook for 1-2 minutes.

  3. Stir in the orange juice, watercress and herbs. Heat through, then quickly pour the hot dressing on to the spinach, orange and goats' cheese.

  4. Add salt and pepper to taste, toss well and serve immediately.
