Ingredients

1/2 red onion, sliced

1 tomato, cut into
8 pieces

5 gift oz coriander
leaves, roughly chopped
-
5 small green or
red chilies, finely sliced
-
125 g/4 oz squid,
cleaned and sliced
-
3 tablespoons lime
juice
-
2 teaspoons palm
sugar or light muscovado sugar
-
3 tablespoons Thai
fish sauce
-
15 g/1/2 oz carrot,
shredded
-
15 g/1/2 oz white
cabbage, shredded
Method:
-
Place the
onion, tomato, coriander and chilies in a salad bowl.

Put the squid
briefly in a saucepan of boiling water and cook for about 1 1/2
minutes.

Remove from the pan and combine with the onion and tomato
mixture. Add the lime juice, sugar and fish sauce and mix together
for 1-2 minutes.

Finally add the carrot and cabbage, give the salad
a quick stir, and serve.
