Salads Recipes - Thai Squid Salad Recipe

Ingredients

Serve 4

  • 1/2 red onion, sliced

  • 1 tomato, cut into 8 pieces

  • 5 gift oz coriander leaves, roughly chopped

  • 5 small green or red chilies, finely sliced

  • 125 g/4 oz squid, cleaned and sliced

  • 3 tablespoons lime juice

  • 2 teaspoons palm sugar or light muscovado sugar

  • 3 tablespoons Thai fish sauce

  • 15 g/1/2 oz carrot, shredded

  • 15 g/1/2 oz white cabbage, shredded


Method:

  1. Place the onion, tomato, coriander and chilies in a salad bowl.

  2. Put the squid briefly in a saucepan of boiling water and cook for about 1 1/2 minutes.

  3. Remove from the pan and combine with the onion and tomato mixture. Add the lime juice, sugar and fish sauce and mix together for 1-2 minutes.

  4. Finally add the carrot and cabbage, give the salad a quick stir, and serve.
