Salads Recipes - Tomato Salad with Anchovies Recipe

Ingredients

Serve 4

  • 1 heaped tablespoon French mustard

  • 2 tablespoons white or red vinegar

  • 75 ml/3 fl oz olive oil

  • 4-5 firm tomatoes, sliced

  • 1 stick celery, cut into thin finger-length strips

  • 1 red onion, diced

  • 1 teaspoon cumin seeds

  • 2 anchovy fillets, chopped

  • salt and pepper

  • 2 hard-boiled eggs to garnish (optional)


Method:

  1. Place the mustard in a small bowl and stir in the vinegar. Season lightly with salt and plenty of pepper. Whisk in the olive oil until the mixture is well blended.

  2. Place the tomatoes in a salad bowl with the celery, onion, cumin seeds and anchovy fillets.

  3. Pour over the dressing, mix well, garnish with the hard-boiled eggs if using, and serve.
