Tomato Salad with
Anchovies Recipe
Ingredients

heaped tablespoon French mustard
2 tablespoons white or red vinegar

ml/3 fl oz
olive oil

firm tomatoes, sliced
1
stick celery, cut into thin finger-length strips
1
red onion, diced
1 teaspoon cumin seeds
2 anchovy fillets, chopped
salt and pepper
2 hard-boiled eggs to garnish (optional)
Method:
Place the mustard in a
small bowl and stir in the vinegar. Season lightly
with salt and plenty of pepper. Whisk in the olive oil
until the mixture is well blended.
Place the tomatoes in a salad bowl with the celery,
onion, cumin seeds and anchovy fillets.
Pour over
the dressing, mix well, garnish with the hard-boiled
eggs if using, and serve.
