Sun-dried Tomato Salad Recipe

2 tablespoons olive
oil

1 onion, sliced

1 garlic clove,
chopped
-
425 g/14 oz can
white beans, drained
-
125 g/4 oz sun-dried tomatoes
in oil, drained and roughly chopped
-
1 tablespoon
chopped black olives
-
2 teaspoons chopped capers
-
2
teaspoons chopped thyme
-
1 tablespoon olive
oil
-
2 tablespoons lemon juice
-
salt and pepper
Method:
-
Heat
the oil in a frying pan, add the onion and garlic,
fry over a high heat until golden, then remove from
the pan.

Put the beans into a mixing bowl and stir in the
onion and garlic.

Add the sun-dried tomatoes,
olives, capers, thyme, olive oil, lemon juice, and
salt and pepper to
taste,
and mix well. Check the seasoning and serve.
