Salads Recipes - White Bean and Sun-dried Tomato Salad Recipe

Ingredients

Serve 4

  • 2 tablespoons olive oil

  • 1 onion, sliced

  • 1 garlic clove, chopped

  • 425 g/14 oz can white beans, drained

  • 125 g/4 oz sun-dried tomatoes in oil, drained and roughly chopped

  • 1 tablespoon chopped black olives

  • 2 teaspoons chopped capers

  • 2 teaspoons chopped thyme

  • 1 tablespoon olive oil

  • 2 tablespoons lemon juice

  • salt and pepper


Method:

  1. Heat the oil in a frying pan, add the onion and garlic, fry over a high heat until golden, then remove from the pan.

  2. Put the beans into a mixing bowl and stir in the onion and garlic.

  3. Add the sun-dried tomatoes, olives, capers, thyme, olive oil, lemon juice, and salt and pepper to taste, and mix well. Check the seasoning and serve.
