- Cannelloni Chef's Salad
Ingredients

2 cans (20 ounces
each) Cannelloni Beans

1/3 cup olive oil
-
3 Tbs. wine vinegar
-
1 clove garlic, minced
-
2 tsps. oregano leaves, crumbled
-
1 tsp. salt
-
1/4 tsp. ground
black pepper
-
3 quarts torn
iceberg lettuce
-
1/4 lb. sliced ham,
slivered
-
2 ounces sliced salami, slivered
-
1/4 lb. Mozzarella
cheese, slivered
-
1/4 cup sliced
roasted peppers
Makes 6 portions
Method:
-
Drain cannelloni beans thoroughly. Meanwhile, in a
medium bowl mix together oil, vinegar, garlic, oregano,
salt and black pepper.

Stir in cannelloni beans. Place
lettuce in a very large bowl. Spoon beans in a circle
close to side of bowl.

Arrange ham, salami, cheese and
roasted peppers in any desired pattern over the
lettuce. Toss just before serving.
