Sauces, Salads Recipes - Cannelloni Chef's Salad

Ingredients

  • 2 cans (20 ounces each) Cannelloni Beans

  • 1/3 cup olive oil

  • 3 Tbs. wine vinegar

  • 1 clove garlic, minced

  • 2 tsps. oregano leaves, crumbled

  • 1 tsp. salt

  • 1/4 tsp. ground black pepper

  • 3 quarts torn iceberg lettuce

  • 1/4 lb. sliced ham, slivered

  • 2 ounces sliced salami, slivered

  • 1/4 lb. Mozzarella cheese, slivered

  • 1/4 cup sliced roasted peppers

Makes 6 portions


Method:

  1. Drain cannelloni beans thoroughly. Meanwhile, in a medium bowl mix together oil, vinegar, garlic, oregano, salt and black pepper.

  2. Stir in cannelloni beans. Place lettuce in a very large bowl. Spoon beans in a circle close to side of bowl.

  3. Arrange ham, salami, cheese and roasted peppers in any desired pattern over the lettuce. Toss just before serving.
