Ensalada Verde
Ingredients

2 avocados, peeled,
pitted and sliced

1/2 cup olive or salad
oil
-
2 Tbs. vinegar
-
1 clove garlic,
halved
-
1 tsp. each; dry
mustard, salt
-
1/4 tsp. pepper
-
1 cup
pimiento-stuffed olives
-
1 package each;
frozen Italian green beans, French-style green
beans, green peas, asparagus spears-all
cooked and drained

1 large cucumber,
peeled and thinly sliced

Salsa Aioli
(below)
Makes 6-8 servings
Method:

Combine for marinade: oil, vinegar and seasonings. Beat
or shake well.

Arrange avocados, olives and vegetables
in serving dish.

Pour marinade over vegetables and chill
several hours.
Salsa Aioli:
Crush 6 cloves garlic; beat in 2 egg yolks. With fork or
wire whisk, slowly beat in 1 cup olive oil and juice of
1 lemon. Add salt and pepper to taste. Makes about 1
cup.
