- Ivan's Potato Salad
Ingredients

10 medium potatoes,
peeled and thinly sliced (6 cups)

6 Tbs. oil

3 Tbs. vinegar

3 Tbs. lemon juice

1/4 cup chopped onion
-
1/4 tsp. powdered dill
-
Dash of salt and
pepper
-
4 hard-cooked eggs,
chopped

1/4 cup mayonnaise
-
3 Tbs. (1/2 oz.)

Additional Caviar for
garnish
Makes 8 generous servings
Method:

Cook potatoes in boiling salted water until barely
tender, about eight minutes. Drain.

In large bowl,
combine oil, vinegar, lemon juice, onion, dill, salt
and pepper. Add potatoes; toss to coat.

Mash eggs with
mayonnaise. Gently stir in Caviar and fold into
potatoes. Cover; keep cold. At serving time, garnish
with additional Caviar.
