Sauces, Salads Recipes - Jello Artichoke Salad

Ingredients

  • 1 9-ounce package Birds Eye Deluxe Artichoke Hearts

  • 1 3-ounce package Jell-O (Lemon or Lime)

  • 1 cup boiling water

  • 1 cup (about 1/4 lb.) sliced fresh mushrooms 

  • 3/4 cup cold water

  • 1 cup prepared Good Seasons Italian Salad Dressing

  • 1 Tbs. sliced pimiento

  • 2 tsps. vinegar

Makes 3 1/3 cups or 6 salads


Method:

  1. Cook artichoke hearts as directed on package. Drain and combine with mushrooms in a bowl.

  2. Pour dressing over vegetables and allow to marinate at least 1 hour. Drain, reserving marinade. Dissolve Jell-O in boiling water.

  3. Add vinegar and cold water. Chill until thickened. Fold in the drained mushrooms and artichoke hearts, and pimiento.

  4. Pour into a 4-cup mold. Chill until firm, about 4 hours.

Note: If desired, reserved marinade can be combined with mayonnaise and used as a dressing for the salad.
