Sauces, Salads Recipes - Salmon Dill Mousse

Ingredients

  • 2 3-oz. packages or 1 6-oz. package jell-O Lemon Gelatin

  • 2 cups boiling water

  • 1 cup cold water

  • 3 Tbs. lemon juice                    

  • 1 1-lb. can pink salmon, drained and flaked

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 2 Tbs. minced onions

  • 1 1/2 tsp. dill weed

Makes 5 1/3 cups or 6-8 servings


Method:

  1. Dissolve gelatin in boiling water. Add cold water and lemon juice. Chill until thickened.

  2. Mix salmon with remaining ingredients. Blend into thickened gelatin.

  3. Pour into an 8 x 4-inch loaf pan. Chill until firm-about 4 hours.

  4. Un-mold. Garnish with dill and thinly sliced cucumber, if desired.
