- Salmon Salad on Avocado Half Shells
Ingredients

3 California
avocados Lettuce

1 15 1/2-ounce can
or 2 7 3/4-ounce cans salmon, chilled

2 Tbs. sliced green
onion
-
1/2 cup sliced celery
-
Lemon-Parsley
Dressing
Makes 6 portions
Method:

Halve, pit and peel avocados, arrange on lettuce-lined
plates.

Drain salmon and separate into chunks with a
fork.

Toss salmon lightly with celery and green onions.

Fill avocados with salmon mixture. Drizzle with LemonParsley.
To prepare
Lemon-Parsley Dressing:
Combine 2/3 cup oil, 3 Tbs. lemon juice, 1 clove of minced
garlic, 1/4 tsp. dry mustard, 1/2 tsp. salt, 1/8
tsp. pepper and 1 Tbs. minced parsley in jar. Cover and
shake until blended. Makes approximately 1 cup dressing.
