Summer Salad with Sour Cream Dressing
Ingredients

2 tsps. unflavored
gelatin

Sour Cream
Dressing (below)
-
1/4 cup cold water
-
2
cups cottage cheese
-
1 cup (1/4 pound) crumbled blue
cheese
-
1/2 cup mayonnaise
-
2
Tbs. minced scallion
-
1 tsp. Tabasco Red Hot Pepper
Sauce
-
1/2 cup heavy cream, whipped
-
3 cups cut-up
fresh fruit in season (melon balls,
strawberries, pear strips, citrus sections, etc.)

6 lettuce cups
Sour Cream Dressing:
-
1 cup sour cream
-
1 Tbs. mayonnaise
-
1/4 tsp. Tabasco Red
-
Hot Pepper Sauce
Makes about
6 servings
Method:

Sprinkle gelatin over water; stir over hot water until
gelatin is dissolved. Combine cheeses, blend in
gelatin.

Stir mayonnaise, scallion and Tabasco into
cheese mixture until all ingredients are thoroughly
blended.

Fold whipped cream into cheese. Pour into
lightly oiled quart mold. Chill until firm about 4
hours.

Carefully un-mold cheese salad onto plate.
Surround mold with individual fruit salads in lettuce
cups. Serve with Sour Cream Dressing.
To prepare Sour
Cream Dressing:
Combine all ingredients. Refrigerate until ready to
serve. Makes 6 servings.
