Sauces, Salads Recipes - Tart Cranberry Mold

Ingredients

  • 1 3-oz package lemon-flavored gelatin

  • 1 1/2 cups boiling water

  • 1 1/2 cups raw cranberries

  • 1/2 medium orange, seeded, unpeeled

  • 1/3 cup chopped Sweet Pickles

  • 3 Tbs. sugar

  • 2 cups prepared whipped-topping mix

Makes 8 servings


Method:

  1. Dissolve gelatin in boiling water; chill until slightly thickened.

  2. Meanwhile, put cranberries and orange through food chopper using fine blade.

  3. Stir in pickles and sugar. Fold cranberry mixture into thickened gelatin; then gently fold in whipped-topping mix.

  4. Pour into a 1-quart (or 8 1/2-cup) mold. Chill until firm. Un-mold on lettuce or endive.
