Yogurt Mayonnaise
Ingredients

1 cup Plain
yogurt

2 tbsp butter
-
4 tbsp flour

1 cup milk
-
1 egg yolk
-
2 tbsp lemon
juice

1/2 tsp dry
mustard

1/2 tsp salt
Makes approximately 2 cups
Method:

Melt
the butter in a skillet and stir in flour. Add milk
all at once and stir over medium heat until thick.

Remove from heat and beat in egg yolk, lemon
juice, mustard and salt. Stir in yogurt
and cool.
