Side Dishes, Vegetables Recipes - Corn and Pepper Fritters

Ingredients            

  • 1 egg

  • 1/2 cup milk

  • 1 can (12 ounces) golden

  • whole kernel com with

  • sweet peppers, un-drained

  • 1 Tbs. Planters Peanut Oil

  • 1 1/2 cups un-sifted flour

  • 1 Tbs. baking powder

  • 1 tsp. salt

  • Dash pepper Planters Peanut Oil

Makes about 24 fritters


Method:

  1. Beat egg in large bowl. Stir in milk, com and 1 Tbs. Peanut Oil. Add and beat in flour, baking powder, salt and pepper.

  2. Drop by tablespoonfuls into deep or shallow hot (375°F.) Peanut Oil. Fry until golden brown, 2 to 3 minutes on each side. Drain on paper towels.

  3. Serve hot. If desired, serve with syrup.
