Side Dishes, Vegetables Recipes - Creamed Cauliflower Casserole

Ingredients              

  • 1 medium head cauliflower

  • 3 Tbs. butter or margarine

  • 1/4 cup flour

  • 2 cups milk

  • 3/4 tsp. salt

  • 1/8 tsp. pepper

  • 1 8-oz. package Herb Seasoned Stuffing Mix

  • 1 cup water

  • 1/2 cup butter or margarine, melted

Serves 8 to 10


Method:

  1. Break cauliflower into small pieces and cook until just tender. Drain and place in a shallow 2-quart casserole.

  2. Melt butter in a medium saucepan. Stir in flour and cook together a few minutes, while stirring. Remove from heat and blend in milk.

  3. Bring to a boil, stirring constantly, and simmer until thickened. Pour over cauliflower in casserole.

  4. Combine the last three ingredients and spoon on top, pressing down if necessary.

  5. Bake at 350°F for 30 minutes.

Note: Broccoli used in place of cauliflower makes a delicious change.
