Side Dishes, Vegetables Recipes - Easy Corn Puffs

Ingredients              

  • 2 10-oz. packages frozen corn or chopped broccoli

  • 1 cup Baking Mix

  • 1 cup milk

  • 2 eggs

  • 1/2 tsp. salt

  • 1 cup shredded Cheddar cheese (about 4 ozs.)

Makes 6 servings


Method:

  1. Heat oven to 325°F. Butter 5-cup soufflé dish or 1 1/2-quart round casserole. Cook corn as directed on package; drain.

  2. Beat Baking Mix, milk, eggs and salt with hand beater until smooth. Stir in com and cheese. Pour into soufflé dish.

  3. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately.
