Side Dishes, Vegetables Recipes - French-Style Vegetable Stew

Ingredients              

  • 1 cup chopped onions

  • 2 cloves garlic, minced

  • 2 small zucchini, thinly sliced

  • 1 medium green pepper, cut into thin strips

  • 1/2 cup olive or salad oil

  • 1medium eggplant, pared, cut into strips (2 x 1/2-inch)

  • 3 Tbs. flour

  • 4 medium tomatoes, peeled, cut into eighths

  • 1/4 cup Heinz Tomato Ketchup

  • 1 Tbs. salt

  • 1/2 tsp. Apple Cider Vinegar

  • 1/2 tsp. crushed oregano leaves

  • 1/4 tsp. pepper

Makes 8-10 servings (about 7 cups)


Method:

  1. In Dutch oven, sauté first four ingredients in oil until onion is transparent.

  2. Coat eggplant with flour; add with tomatoes to sautéed vegetables.

  3. Combine ketchup and remaining ingredients, pour over vegetables.

  4. Cover; simmer 30-35 minutes; stir occasionally, or until vegetables are tender.

Note: Zucchini may be peeled if skin is tough.
