Side Dishes, Vegetables Recipes - Grecian Rice

Ingredients              

  • 3 Tbs. butter or margarine

  • 1/2 cup finely chopped onion

  • 1/2 cup finely chopped green pepper

  • 2 cloves garlic, minced or pressed

  • 1 cup long grain rice

  • 2 cups beef bouillon

  • 1 tsp. cinnamon

  • 1/2 tsp. salt

  • 2/3 cup Blue Diamond Chopped Natural Almonds

  • 1/2 cup dark, seedless raisins

Makes 4 servings


Method:

  1. In large skillet melt butter; sauté onion, green pepper and garlic until barely tender.

  2. Add rice and cook, stirring often, until lightly toasted, about 4 to 6 minutes.

  3. Stir in bouillon, cinnamon and salt; cover and simmer 10 minutes.

  4. Stir in almonds and raisins; continue cooking, covered, another 5 minutes or until all liquid is absorbed.
