Side Dishes, Vegetables Recipes - Guacamole Potatoes

Ingredients              

  •  4 baking potatoes

  • 1 California avocado

  • 2 Tbs. sour cream

  • Dash salt and pepper

  • 4 slices bacon, crisply cooked and crumbled


Method:

  1. Scrub potatoes and rub skins with shortening. Prick skins with fork to allow steam to escape; bake in 375°F oven for 1 1/4 to 1 1/2 hours.

  2. Mash avocado with fork to chunky texture and mix in sour cream and seasonings.

  3. When potatoes are done, cut down the center, spoon in avocado mixture and sprinkle on crumbled bacon.
