Side Dishes, Vegetables Recipes - Monterey Bay Chutney

Ingredients                

  • 1 cup seedless Raisins

  • 1 cup Golden Seedless Raisins

  • 1 cup Currants

  • 1 cup finely chopped onion

  • 1 quart diced pared tart apples

  • 1 tsp. salt

  • 1 1/2 tsps. powdered ginger

  • 1/2 tsp. allspice

  • 1/8 tsp. cloves

  • 1 cup vinegar

  • 1 cup dry white wine or water

  • 1/2 cup sugar

  • 1/4 cup diced green pepper

  • 1/4 cup diced pimiento

Makes about  1 1/2 quarts


Method:

  1. Combine all ingredients, except green pepper and pimiento.

  2. Simmer 20 to 25 minutes, uncovered, until thickened.

  3. Add green pepper and pimiento. Cook 5 minutes longer. Cool.
