Side Dishes, Vegetables Recipes - Savory Baked Tomatoes

Ingredients              

  • 4 large tomatoes

  • 1/3 cup Olive Oil

  • 1 small onion, chopped

  • 1 pimiento, cut into strips

  • 2 Tbs. minced ham

  • 1/2 tsp. salt

  • 1/8 tsp. pepper

  • 1/4 tsp. marjoram

  • 1 Tbs. minced parsley

  • 1 cup soft bread crumbs

Makes 4 servings


Method:

  1. Cut a 2-inch wide cap from the stem end of the tomatoes. Hollow out tomatoes, removing pulp and discard with the caps.

  2. Heat 4 Tbs. of olive oil in a skillet, add onion and sauté until tender. Stir in remaining ingredients, browning slightly.

  3. Spoon stuffing mixture into tomatoes. Place remaining 2 Tbs. olive oil into a shallow baking pan, arrange stuffed tomatoes in the pan, brush with a little of the oil.

  4. Bake at 350°F for 40 minutes until cooked through.
