Ingredients

3 Tbs. bacon
drippings
-
1 cup uncooked Riviana Rice
-
3/4 cup chopped onion
-
1/2 cup chopped green
pepper
-
1/2 cup chopped celery
-
1 14-oz can stewed
tomatoes
-
1 cup water
-
1 1/2 tsps salt
-
1 tsp. chili
powder
Makes
6 servings
Method:
-
Heat 2
Tbs. fat in large skillet; add rice. Brown lightly, stir ring
frequently.
-
Add remaining 1 Tbs. fat, onion, gre0n pepper and
celery; cook until soft.
-
Add remaining ingredients, cover pan
tightly, and simmer for 20-30 minutes.
-
If rice is then not
sufficiently tender, add a little more water
,
cover,
continue to cook until soft.
