Side Dishes, Vegetables Recipes - Spanish Rice

Ingredients              

  • 3 Tbs. bacon drippings

  • 1 cup uncooked Riviana Rice

  • 3/4 cup chopped onion

  • 1/2 cup chopped green pepper

  • 1/2 cup chopped celery

  • 1 14-oz can stewed tomatoes

  • 1 cup water

  • 1 1/2 tsps salt

  • 1 tsp. chili powder

Makes 6 servings


Method:

  1. Heat 2 Tbs. fat in large skillet; add rice. Brown lightly, stir ring frequently.

  2. Add remaining 1 Tbs. fat, onion, gre0n pepper and celery; cook until soft.

  3. Add remaining ingredients, cover pan tightly, and simmer for 20-30 minutes.

  4. If rice is then not sufficiently tender, add a little more water , cover, continue to cook until soft.
