Sweet Potato Ring with Cashew
Ingredients

1/4 cup firmly
packed light brown sugar
-
2 Tbs. Margarine,
melted
-
1/4 cup chopped
Planter Cashew
Halves
-
1 18-oz. can
vacuum-packed sweet potatoes
-
1 cup milk
-
3 eggs
-
1 tsp. ground
cinnamon
-
1/2 tsp. salt
-
1/4 tsp. ground
allspice
Serves 6 to 8
Method:
-
Combine brown sugar and Margarine; spoon into bottom of
a well-greased 1-quart ring mold. Arrange Planters Cashew Halves in
sugar mixture in mold.

In electric blender or food processor combine
sweet potatoes, milk, eggs, cinnamon, salt and allspice. Blend until
smooth and creamy.

Spoon into prepared ring mold. Place ring mold in
pan of hot water and bake at 325°F for 1 hour and 10 minutes, or
until knife inserted in center comes out clean.

Loosen edges with a
knife; invert onto serving plate and serve immediately.
