Side Dishes, Vegetables Recipes - Triple Corn Fritters

Ingredients              

  • 1 1/3 cups All-Purpose or Unbleached Flour*

  • 12 cup yellow cornmeal

  • 1 Tbs. baking powder

  • 2 tsps. sugar

  • 1 tsp. salt

  • 2 eggs, beaten

  • 1/3 cup milk

  • 2 Tbs. oil

  • 1 8 1/2-oz. can Golden Cream Style Corn

  • 1 12-oz. can Golden Whole Kernel Corn, drained

  • Oil for deep frying

Makes 28 fritters


Method:

  1. Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, cornmeal, baking powder, sugar and salt.

  2. In large bowl, combine eggs, milk, oil and cream style corn. Blend in dry ingredients, stirring just until moistened. Stir in whole kernel corn.

  3. In deep fat fryer or heavy saucepan drop batter by tablespoonfuls and fry in 2-3 inches hot fat (365°F.) for 2-3 minutes on each side or until golden brown.

  4. Drain on paper towel. Serve warm.
