Side Dishes, Vegetables Recipes - Twice-Baked Potatoes

Ingredients            

  • 8 medium baking potatoes

  • 2 Tbs. butter or margarine

  • 1/4 tsp. salt

  • 1 can Campbell's Cheddar Cheese Soup

  • 1 Tbs. chopped dried chives

Makes 8 servings


Method:

  1. Bake potatoes until done. Cut potatoes in half lengthwise; scoop out insides leaving a thin shell.

  2. With electric mixer, mash potatoes with butter and salt. Gradually add soup and chives; beat until light and fluffy.

  3. Spoon into shells. Sprinkle with paprika.

  4. Bake in 2 1/2-quart shallow baking dish (13 x 9 x 2 inches) at 450°F for 15 minutes or until hot.
