1 garlic
clove, halved

150 ml/1/4
pint dry white
wine

125 g/4 oz
Gruyere cheese, grated

250 g/8 oz
Cheddar cheese, grated

1 teaspoon
corn flour
-
2 tablespoons sherry
-
2 teaspoons
anchovy essence Tabasco sauce

cayenne pepper
To
serve:
Method:

Rub the inside of a fondue dish with the cut garlic.
Pour in the wine and heat gently until bubbling.

Gradually stir in the cheeses and heat gently,
stirring, until the cheeses melt and begin to cook.

Blend the
corn flour with the sherry and add the
anchovy essence, Tabasco and cayenne to taste.

Stir
into the cheese and heat gently, stirring, for 2-3
minutes, until the mixture is thick and creamy.

Place over a spirit burner and keep at a simmer. Use
long fondue forks to dip the prawns and bread cubes
into the hot fondue.
