Snacks and Light Meals Recipes - Anchovy and Prawn Fondue Recipe

Ingredients

Serve 4-6

  • 1 garlic clove, halved

  • 150 ml/1/4 pint dry white wine

  • 125 g/4 oz Gruyere cheese, grated

  • 250 g/8 oz Cheddar cheese, grated

  • 1 teaspoon corn flour

  • 2 tablespoons sherry

  • 2 teaspoons anchovy essence Tabasco sauce

  • cayenne pepper

To serve:

  • 125 g/4 oz cooked peeled prawns

  • day-old French bread, cut into bite-sized cubes


Method:

  1. Rub the inside of a fondue dish with the cut garlic. Pour in the wine and heat gently until bubbling.

  2. Gradually stir in the cheeses and heat gently, stirring, until the cheeses melt and begin to cook.

  3. Blend the corn flour with the sherry and add the anchovy essence, Tabasco and cayenne to taste.

  4. Stir into the cheese and heat gently, stirring, for 2-3 minutes, until the mixture is thick and creamy.

  5. Place over a spirit burner and keep at a simmer. Use long fondue forks to dip the prawns and bread cubes into the hot fondue.
