Snacks and Light Meals Recipes - Anchovy and Red Pepper Pizzas Recipe

Ingredients

Serve 4

  • 4 tablespoons olive oil

  • 2 red onions, sliced

  • 4 red peppers, cored, deseeded and cut into strips

  • 2 garlic cloves, chopped

  • 2 quantities Basic Pizza Dough, divided into 4 pieces

  • 50 g/2 oz can anchovies

  • handful of marjoram, chopped

  • 1 tablespoon black olives, pitted and chopped

  • 250 g/8 oz buffalo mozzarella, sliced

  • salt and pepper


Method:

  1. Heat the olive oil in a saucepan, add the onions and red peppers, and fry for about 5 minutes until soft. Add the garlic and mix well.

  2. Roll out each piece of dough to a 23 cm/9 inch round. Place the pizza bases on oiled baking sheets. Spoon and spread the cooked peppers over them.

  3. Arrange the anchovies on top of the pizzas and sprinkle with salt and pepper, chopped marjoram and olives, and add the slices of mozzarella.

  4. Put the pizzas into a preheated oven, 230°C (450°F), Gas Mark 8, and bake for 10 minutes. Serve the pizzas immediately.
