Snacks and Light Meals Recipes - Artichoke and Goats' Cheese Pizzas Recipe

Ingredients

Serve 4

  • 2 quantities Basic Pizza Dough, divided into 4 pieces

  • 2 onions, finely sliced

  • 1 kg/2 lb artichoke hearts in oil

  • 2 tablespoons black olives, pitted

  • 175 g/6 oz mild goats' cheese, thinly sliced or crumbled

  • handful of oregano, chopped

  • salt and pepper


Method:

  1. Roll out each piece of dough to a 23 cm/9 inch round. Place the pizza bases on oiled baking sheets.

  2. Mix together the onions and artichokes and season well with salt and pepper.

  3. Divide the mixture between the bases and spread over evenly. Sprinkle with the olives and top with the goats' cheese, oregano and salt and pepper.

  4. Put the pizzas in a preheated oven, 230°C (450°F), Gas Mark 8, bake for 10-15 minutes and serve immediately.
