Asparagus Omelet

500 g/1 lb
young asparagus, trimmed
5
eggs
2 tablespoons milk
4 tablespoons
finely chopped flat leaf parsley
2 tablespoons olive
oil
15 g/1/2 oz butter
2 tablespoons
grated Parmesan cheese
salt and pepper
Method:
Cook the asparagus in plenty of salted boiling water
for 10 minutes. Drain and refresh under cold running
water, then cut into 1 cm/1/2 inch lengths.
Beat the
eggs, milk and parsley in a bowl and season with
salt and pepper to taste. Add the pieces of
asparagus and stir to mix.
Heat the oil and butter in a 30 cm/12 inch nonstick
frying pan until foaming. Pour in the egg mixture
and let it settle, then cover the pan and cook over
a low heat for 10 minutes or until the omelets is
almost set.
Sprinkle the Parmesan evenly over the
omelets, then
put it under a preheated grill for 2-3 minutes until
golden brown and set. Serve warm or cold.
