Snacks and Light Meals Recipes - Asparagus Omelet Recipe

Ingredients

Serve 4

  • 500 g/1 lb young asparagus, trimmed

  • 5 eggs

  • 2 tablespoons milk

  • 4 tablespoons finely chopped flat leaf parsley

  • 2 tablespoons olive oil

  • 15 g/1/2 oz butter

  • 2 tablespoons grated Parmesan cheese

  • salt and pepper


Method:

  1. Cook the asparagus in plenty of salted boiling water for 10 minutes. Drain and refresh under cold running water, then cut into 1 cm/1/2 inch lengths.

  2. Beat the eggs, milk and parsley in a bowl and season with salt and pepper to taste. Add the pieces of asparagus and stir to mix.

  3. Heat the oil and butter in a 30 cm/12 inch nonstick frying pan until foaming. Pour in the egg mixture and let it settle, then cover the pan and cook over a low heat for 10 minutes or until the omelets is almost set.

  4. Sprinkle the Parmesan evenly over the omelets, then put it under a preheated grill for 2-3 minutes until golden brown and set. Serve warm or cold.
