Baked Garlic with
Brie Recipe
Ingredients
Serve 4
2 garlic heads
150
ml/1/4
pint olive oil
2 rosemary sprigs, bruised
salt
and pepper
To
serve:
wedge of ripe Brie
crusty bread
Method:
Cut a small slice
from the top of each head of garlic and sit them in
a small baking tin.
Pour over half the oil and top
with the rosemary sprigs. Season well with salt and
pepper, cover with foil and bake in a preheated
oven, 200°C (400°F), Gas Mark 6, for 1 hour.
Remove
the foil, baste and bake for a further 15-20 minutes
until caramelized.
Split each garlic head in two and
then transfer each half to a small plate, drizzle
over the remaining oil and serve with a wedge of
Brie and plenty of crusty bread.
