Snacks and Light Meals Recipes - Baked Garlic with Brie Recipe

Ingredients

Serve 4

  • 2 garlic heads

  • 150 ml/1/4 pint olive oil

  • 2 rosemary sprigs, bruised

  • salt and pepper 

To serve:

  • wedge of ripe Brie

  • crusty bread


Method:

  1. Cut a small slice from the top of each head of garlic and sit them in a small baking tin.

  2. Pour over half the oil and top with the rosemary sprigs. Season well with salt and pepper, cover with foil and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 1 hour.

  3. Remove the foil, baste and bake for a further 15-20 minutes until caramelized.

  4. Split each garlic head in two and then transfer each half to a small plate, drizzle over the remaining oil and serve with a wedge of Brie and plenty of crusty bread.
