Snacks and Light Meals Recipes - Bruschetta Recipe

Ingredients

Serve 4

  • 8 slices of ciabatta bread

  • 2 garlic cloves, peeled

  • small handful of flat leaf parsley, chopped

  • 5 tablespoons olive oil

  • salt


Method:

  1. Toast the ciabatta bread under a preheated grill until golden brown.

  2. Rub the garlic over one side of the bread; the bread acts as a grater and the garlic is evenly spread over it.

  3. Sprinkle the bruschetta with the parsley and salt and drizzle with olive oil.

  4. Serve immediately or keep warm until required, but not for too long or the bruschetta will lose its crunchiness.
